You should try using lamb chops with potatoes and cooked beans, or even asparagus. When using the potatoes, instead of making mashed potatoes or baked potato, you can make healthy french fries. Just cut the potato into wedges (around 8-10 per each potato). Drizzle salt, pepper, and red pepper flakes if you like a kick in your french fries. Bake it for around 10-15 minutes and check if the potato is done. If not, continue to cook it but check on it occasionally. Technically these aren't french fries but yeah. Another recipe is using onions, garlic, and some singapore noodles, which you can find in local asian stores.

Chops, mash , carrots and peas or garlic beans.
Put a bit of butter into a pot or pan, add little bit of crushed garlic, let it fry for a few seconds not to long else it burns, add cooked beans to it ,stir and add salt and pepper. Taste nice.
Or you could have Fried chops, mash, pumpkin and peas.

parsleyed new potatoes are great and have a dish of steamed green beans with lemon butter.
cook the potatoes as usual, in jacket, drain, add a tablespoon of butter and 1 tablespoon fresh parsley or 2 teaspoons dried. Salt to taste. sometimes I add rosemary to the potato cooking water, just a sprinkle.

Make a salad using butter lettuce, diced tomatoes and cucumbers with green onions and feta cheese, drizzle with olive oil and red wine vinegar, season with dried oregano. Simple and light; won't over power the lamb.

I usually do new potatoes with a sprig of mint and butter, and green beans. My lot love this meal.
