That is a closely guarded secret. But, it is a cold salt brine fermentation pickling process. No vinegar is used, and they probably are aged 6-9 months if not better. The closest that one can come to it would be a cold kosher brine pickling process that anyone can do. try recipesource.com or allrecipes.com for that type of recipe. Good Luck
