After beating Mass Effect 2, what's there to do?
Assumming I've beaten all the side missions and DLC too, do the mobs respawn and such things?

Nope.
Replay it as a Paragon/Renegade. Once you finish that, try playing as a Man/Woman. Then, try all those with each different combat class (i.e. Soldier, Technician, Sentinel, etc.)
What I do is that I go back and make different choices in Mass Effect 1 and see how that carries over to Mass Effect 2. It's really interesting to go back and forth, knowing which missions carry over into the next game and how they affect the storyline.
