Do you have a good recipe for tomatillo pie?

We picked quite a few tomatillos before we had a hard frost last night. I would like to make a tomatillo pie to take to a dinner I am planning to attend tomorrow evening. Does anyone have a good recipe?

    Chile Rellenos Pie

    Ingredients

    4 eggs

    1/2 cup milk

    1/4 cup fresh cilantro (chopped)

    1 red bell pepper (diced)

    1 pinch salt

    1 pinch black pepper (ground)

    2 dash sauce (jalapeno)

    1 cup shredded cheddar (monterey jack cheese blend)

    4 oz green chile (diced)

    1 tomatillo (diced)

    1 pastry (recipe, 9 inch single crust pie)

    Directions

    Beat the eggs. Combine with milk, cilantro, bell pepper, spices, cheese, chiles, and tomatillo. Pour filling into the pie shell.

    Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes, or until knife inserted in center comes out clean. Cool to room temperature. Garnish each individual piece of pie with a dollop of sour cream and drizzle with your favorite salsa!

    Aztec Pie

    Ingredients

    11/2 cup pork shoulder (cooked and shredded pork butt)

    1/8 cup corn oil

    1/2 cup diced onion

    1 tbsp minced garlic

    5 poblano chiles (seeded and chopped)

    5 tomatillos (husked and chopped)

    1 cup chicken stock

    1 cup heavy cream

    salt

    12 corn tortillas

    11/2 cup gouda (mild, cheese)

    1/2 cup chopped cilantro (garnish)

    1/2 cup sour cream (garnish)

    Directions

    Remember that you will need to cook the pork before preparing the rest of the casserole.

    Heat 2 tablespoons of the corn oil in a sauté pan over medium heat and cook the onions until soft.

    Add the garlic, poblano, and tomatillos and let them cook for about 10 minutes, stirring frequently, until the poblano is soft.

    Add the chicken stock and bring to a boil, then reduce heat to low and cook for 10 minutes.

    Add cream and cook for 5 more minutes.

    Purée the poblano sauce in a blender until smooth, strain, and return to the pan.

    Season with salt and reduce some more if necessary.

    Sauce should coat the back of a spoon.

    Heat a few tablespoons of corn oil over medium-high heat and cook the tortillas in it for no more than 10 seconds.

    Drain on paper towels.

    Preheat oven to 350 degrees.

    Place 6 tortillas on the bottom of a shallow baking or casserole dish (about 9 by 11 inches or 10 by 10 inches in size; shape does not matter).

    Cover the tortillas with half of the shredded pork, ladle on half the sauce, and sprinkle with half of the cheese.

    Repeat with a second layer.

    Cover and cook for 35 minutes, then uncover and lightly brown on top.

    Cut into serving-size pieces and garnish with cilantro and a dollop of sour cream.

    Green Spring Chili and French Fry Pie

    Ingredients

    28 oz french fries (frozen shoestring)

    2 tbsp extra-virgin olive oil

    2 lb ground turkey (breast)

    salt

    black pepper

    1 tsp poultry seasoning

    1 tbsp ground cumin

    1 onion (finely chopped)

    2 garlic cloves (chopped)

    15 oz white kidney beans (cannellini beans drained)

    3/4 cup chicken broth (beer)

    2 cup tomatillo (store-bought, salsa green)

    2 tbsp chopped cilantro (flat leaf parsley)

    4 scallions (finely chopped)

    1 tsp chili powder

    2 pinch cayenne pepper

    Directions

    Preheat oven to 425°F Arrange the fires in a single layer on a rimmed baking sheet and bake, tossing halfway through, until browned, 25 minutes.

    Meanwhile, heat the olive oil in a large non-stick skillet over medium-high heat. When the oil smokes, add the turkey and cook, breaking up the meat. Season with salt and pepper, the poultry seasoning and cumin; brown and crumble the meat for 3 to 4 minutes.

    Add the onion and garlic and cook for 5 more minutes.

    Add the beans and stir to heat through. Add beer and cook for about 1 minute. Stir in the salsa and simmer the chili over low heat.

    When the fries finish baking, stir the cilantro into the chili.

    Transfer the chili to a medium casserole and top with the scallions.

    Mix a teaspoon of salt with the chili powder and cayenne. Remove the fries from the oven and top with the seasoned salt. Pile the fires on top of the casserole, evenly covering the green chili and serve.
