When interviewing for a job, is it appropriate to ask "How many other candidates are there?"?
If so, could I word it better? The job is Banquet Manager/Captain.

Don't ask them that during the first interview. It doesn't even matter how many people you're up against, you just need to stand out. If you're worried about the competition, it will distract you and keep you from showing how qualified you are. Just show your personality a lot and the enthusiasm for the position. If you're called for a second interview, they'll possibly tell you how many people you're up against at that time.

they're the ones asking questions, better just answer them rather than presenting your own

No proper.
According to them, it's not really your business and you could create a negative attitude.
If you are the only one, they will not tell you the truth.
Since you could then negotiate much higher pay.

I guess that would give away the impression that you're not confident and/or maybe not qualified enough.
