1.why does it keep on hiding and take us over an hour to find him in the morning
2. do feline cat chase mice ?
he is 1 year and 9 months old
it was adopted from a shelter

Your cat is scared, she is new to your house and does not know if she is safe there. Give her time to feel safe and give her a quiet corner or room with food and bedding, otherwise she will be hiding under the bed. Sometimes it will take half a year or more for a cat to feel safe at home. Be patient and it will be really rewarding.
All cats chase mice, make that also bugs, squirrels, rats, chipmunks, songbirds, gulls, pheasants(!) and snakes. Anything that moves fast will trigger their interest. A bell on the collar won't help either. It is not a matter of hunger but an instinct. It depends how good hunter your cat is and what she rather won't chase.

The two answers so far are spot on, we are going through the process of introducing a new cat into our home right now. Picked her up from a breeder last Saturday (She's an Ocicat being retired from breeding), and the first day she stayed under the bed in her room, never came out while we are around. We know she came out SOMETIME because her food gets eaten. It has been three days now, and she will come out to look around the room, and plays with a kitty teaser. She does not come up to us seeking affection yet, but allows us to approach her, and a few pets and strokes start her purring. You will probably have the same kind of experience, just give your kitty time to adjust, his entire world has been totally disrupted, takes time to come to terms and learn about his new humans and home.
ALL cats are felines, along with a lot of other species like Ocelots, Cheetahs, Bobcats, Pumas, Lions, Tigers, and many others. One common characteristic of all of them is that they are all predators and hunters. Our kitty is a totally indoor cat, but still loves to play fetch with us with her fuzzy mouse toys.
Give him time to settle in, let him do this at his own pace.

When you bring in a new cat/kitten you should have one room set up for the new one with own food, water and litter pan and a nice bed to sleep in. The new house is very overwhelming and the cat doesn't know the house or you. When you find him again, confine him to one room for about a week and then let him out to explore.
He needs to establish a "safe" place he knows is his.

they are probably scared of there new surroundings maybe you should just put them in 1 room and spend time with them so they will get used to you and feel more comfortable.
