I have extra enchilada filling, (Chicken/Onion/Chili Peppers) Will this freeze well?

Mainly im wondering about the green chili peppers.

Also, I am going to freeze the enchiladas into portion sized pieces, how long will these last for?

    Enchilada's can be frozen for about 6 months. Chili's freeze great, too. Don't add any sour cream to the enchilada filling before you freeze them , because sour cream doe's not freeze well = )

    Yes, freezing & cooking will rupture the cells in peppers & onions.

    But that is not a problem if they are being used immediately.
