    Looks like it's the USA, with much of it used domestically, especially by the fast food places.

    Within the states, Wisconsin leads the pack, but people may not realize how closely California follows behind it. In 2010 it was Wisconsin 2.6 billion pounds with California 2.2 billion pounds.

    I remember one year when one of our newspaper columnists discussed the issue of whether California could legally take its wine to a food festival in Wisconsin. Then she commented, "Wait until they hear that we're bringing our own cheese."

    Even within California there's some competition. For instance, most people are familiar with Monterey Jack Cheese, but did you know that there's also a wonderful Sonoma Jack Cheese up north? Then there are specialties such as brie, which I never even tasted before moving to California. Any of these are wonderful with your sourdough bread or your crackers. It does make it interesting that all of us enjoy trying foods from each other's states much more than when I was growing up. (Canned foods by the big food production companies don't exactly count as much of a sampling.) The drawback, of course, is the increased use of gas for all of this food transportation.

    Aside from all this, one thing not included in the statistics is home production for personal use. For instance, households in India often make & use their own wonderful cheese known as paneer. I've tried making it a few times. It was okay but not really firm enough to do anything other than to eat it with a fork or spoon, much like you would with cottage cheese. It was kind of cool to learn first-hand all about curds & whey. Maybe I'll get inspired to try it again one of these days. I did much better making my own yogurt overnight in a little wide-mouthed thermos & have done that many times, but maybe someday I'll also master the skill of making my own paneer.

    I don't know about the most,but the best feta cheese comes from Greece.

    Denmark and Cyprus also have good cheese!
