What is your motive for volunteering? Are you interested in the profession or you are seeking knowledge base information as to what they do?
I visited several chiropractors simply because I had questions regarding the profession. One thing I can tell you is they are not all the same. Every office is different with varying attitudes and treatment protocols. You should dress professionally. You are volunteering but at the same time you are representing the company. Patients who get treated at the clinic will look at you and base your character on that of the doctors so yes do dress up. I would not wear scrubs per say but I would wear a shirt and a tie and look professional. One thing you can do is call up the office you want to volunteer for and ask them for the appropriate dress code. Human nature states; the way you present yourself depends on how others will treat you. Getting dressed to that doctor's office, I think he/she would appreciate your effort and would be more willing to answer questions you may have.
Lastly (in response to the previous comments below), Chiropractic just like any other profession is just as that, a profession. Good and bad people exist in every profession. If you have a distaste at one office doesn't mean they are all the same. Don't always listen to what people say. Having deep passion for healthcare, I happen to think Chiropractic is a unique profession. Volunteer and see for yourself with the thought behind your mind that, not all of them are the same. Good luck!

You expect to do basic work at a chiropractic office. The specifics will be up to your supervisor.
You wear what your supervisor tells you you can wear. There is no federal law on what volunteers at Chiropractic offices wear.
You eventually get hired by filing a position they need. Simply volunteering doesn't mean you *will* get hired. If the place has a steady staff that has no plans to leave, there is no position for you. No job, no job.
Good Luck

Usually people volunteer at non-profits or charities. A doctor who is charging his patients usually pays his staff. Are you an intern?

You can expect to be exposed to just how chiropractors scam patients and use quackery to treat them. Keep you eyes wide open, and you will learn a lot. http://www.youtube.com/watch?v=CJOMEw73-FI
