What is a cheap VEGAN-friendly meal that you would usually just throw together?

At the minute, I usually just opt for throwing a bunch of vegetables in a frying pan and adding some vegan-friendly sweet chilli sauce, but I'm transitioning my boyfriend and I want to have some things that might make him more excited than what I go for.

Your favourite meals would be awesome to hear about, as my cooking creativity is quite plain!!!

    rice is great when you are hungry and want 2000 of something-Mitch Hedberg.

    the easiest vegan meal that i like is rice with boiled sweet potatoes and refried beans all mixed together and topped with salsa. very easy. very tasty. very cheap.

    Eating a starch based vegan diet is the cheapest healthy vegan diet there is.

    stuffed peppers,

    sauté small diced zuchinni, eggplant, mushrooms and a red potato in olive oil with garlic, cook until tender then scrape into a bowl, and add some textured veggie protein to the skillet, season as needed, then add veggies and stir, Fill peppers that have had tops and insides removed, place in baking dish with a tablespoon of water, top with panko breadcrumbs and vegan grated cheese, drizzle with olive oil. cover loosely with foil and bake 20 mins at 375, then uncover and cook 10-15 mins more, serve with rice or couscous

    You can make any number of different vegan pasta sauces. tomato, mushroom, creamy avocado.

    but man cannot live on pasta

    how bout a vegan chili

    or a vegan burrito.

    or a vegan pizza.

    Google those. the vegan pizza is super easy if you use a pre-made crust.

    my all time favorite is beans and rice. I am not vegan so I add sausages and you could add fake meat sausage too.

    Saute the onions, celery, peppers and garlic, add the fake sausages(diced) the rice and a can of diced tomatoes,some water, a couple bay leaves and what ever spice you like.

    simmer, covered till the rice is almost tender. Add a can of what ever beans you like and cover, continue cooking till the rice is tender.

    It has everything: veggies, carbs, fiber, protein, iron, is filling and tastes pretty darn good too.

    here's my old standby. chop two sweet potatoes into chunks and cook lightly with oil and chilli flakes. to the pan add two ladles of dry long grained white rice and two ladles of brown or green lentils. cover with boiling water and bring back to the boil for about five minutes. then simmer until the lentils are cooked. most of the liquid should be absorbed. stand while you cook green vegs and serve together.

    I definitely prefer fresh vegetables more. I don't like all the acid generally in most fruits.

    Put raw chopped veggies (lettuce, cucumber, carrots are my go to) into a taco shell with some olives, avocado, and some homemade salsa.

    - Pita pockets stuffed with falafel, hummus, and vegetables (lettuce, tomatoes, red onion, cucumber).

    - Chili made with beans, vegetables, and corn.

    - Quesadillas, tacos, and burritos. Use beans and lots of veggies. You could even use vegan cheese, but avocado is also a good substitute.

    - Pizza. All you need is crust (which can be homemade or store bought), sauce, and a lot of vegetables. Vegan cheese optional (homemade is best: http://www.onegreenplanet.org/vegan-recipe/how-to-... or drizzle with olive oil.

    - Vegan lasagna.

    - Stir-fried vegetables (broccoli, cauliflower, mushrooms, peppers, onions, zucchini, carrots, eggplant, any vegetable really), and tofu (extra firm) served over quinoa.

    - Pad Thai.

    - Pasta (whole-wheat) with tomatoes, mushrooms, and black beans. I like to add textured vegetable protein (TVP) to this, which can be bought in bulk, but it's still good without.

    - Ramen noodle soup (NOT the garbage instant kind) with vegetables, mushrooms, and tofu/tempeh.

    - Vegetable and quinoa (or brown rice) pilaf.

    - A big salad with a source of protein (tofu, tempeh, chickpeas, nuts, seeds) and baked pita chips.

    - Roasted eggplant.

    - Vegetable pot-pie.
