It depends on the health of the cat.
My cat will run around at full speed for a good 3 mins, then will stop and lay down short of breath.
Other cats, who are in better shape, will run and run and run and run at top speed and not need to take a break for a good long time.
Usually breathing fast and shallow while playing is a sign to let up and give your cat a break for a few mins. If your cat is breaking like this without play, it is a cause for concern, and you should call your vet.
