A friend has a lovely, fresh and simple recipe she got from her mother.

Wash several tomatillos and then boil them til they are nice and soft.

Drain the water, add chicken broth and a garlic clove and boil til very very soft.

Run through a food processor, salt and pepper to taste then stir in a bit of coarsely chopped cilantro.

This is great with chicken or seafood enchiladas.

Is it the heat from the peppers you object to? You can adapt any tomatillo salsa recipe by substituting mild peppers (try Anaheim) and removing all the seeds before you dice them into the salsa. That way you get the right flavor, but no heat.
