To blanch something means to submerge it in boiling water for a specific amount of time. Blanching a tomato is how you remove the skin. Blanching vegetables before freezing them prevents them from getting soggy when they are cooked.

its a method of quick cooking.
for example you blanch veggies you are going to freeze to prepare them for freezing.
You boil water, drop the veggie in the boiling water and leave I for just a few minutes and then remove. Drop into ice water to stop the cooking and you have just blanched veggies.

Bring it the boil and taking it out pretty much straight away. Your vegetables will remain crispy.
