    the top tier is usually swordfish, shark, and tuna.Mahi-mahi, salmon, monkfish and tilefish are also wonderful starters.

    Last fish I had grilled was a trout and that was in 1994. I caught two from the stream at the back of our house by tickling. The only fish I have today are tinned sardines.

    I think salmon would get the most votes for that but we also like grilled halibut, whole trout (great presentation) and swordfish.

    Oily fish like mackerel, herring, salmon, sardines.

    "Meaty" fish which means firm texture. Salmon, halibut, tuna, swordfish and a few others. Flakier fish like trout and tilapia tend to fall apart as they get done. If you have a whole fish - like a trout - the skin will hold it together. But that is harder to do well than just grilling a filet.

    Black sea bass, but salmon will work in a pinch.
