Can a non-Indian person have a Hindu wedding?
I am a converted hindu. I am American and so is my fiance. I would like to conduct my wedding using traditional hindu customs but am unsure how others would view this, especially since neither my nor his family is hindu.

You should watch the movie, “Rachel getting married.” It’s a great movie. With a Hindu wedding in it in Connecticut or someplace.

You don't say if your fiance has converted. If he has, then your family should not be surprised if you have a Hindu wedding. Would you ask this if you had converted to a Christian denomination, or Islam? Whether or not your fiance is Hindu, you should approach a Hindu priest about tour wedding. If you go ahead, it would be considerate to let your guests know if there are any protocols they need to follow.
