How can I make my cats like me again?

I'm more concerned about mom. She needs help NOW! She can't control her emotions. She may be Borderline Personality or Bi-polar. You need to call Social Services, or if she has medical, her doctor. She's not rational.

The cats should be rehomed.  They are being abused and no amount of cuddling will make them less afraid now.

Cats just use humans for food

Your mother wasted her time abusing the animals, they do not understand that they have done anything wrong, she may have seriously injured them,they will never trust your mother again,the kindest thing to do would be to re home them, and by the way, they will mess anywhere they please now, including beds unless you keep the bedroom doors shut.

Need a pooper pan and gravel or they will do it where they can.....
