I would choose "due to" but I'm not sure,could you help me please?

Hi to everyone! I'm doing my English homework and I came across this sentence : "He urges me to slow down and we sit for 40 minutes in a glade and wait to see if a roe,fallow or muntjae deer will emerge; or perhaps a fox,badger or wild boar....but up pops a rabbit!"

Well,I think there is a mistake, because I expected to read "a rabbit pops/popped up".So how would you explain this inversion? Is there such a structure in English or it's just a typo?

essere vegetariani significhi mangiare solo verdura?

Da quando ho deciso di intraprendere questo cammino ho notato che molte persone quando sentono questa parola fanno questo ragionamento "vegetariano=persona che non mangia carne----------> QUINDI : persona che mangia solo verdura/insalata". Mi domando : ma perché?

Per quale motivo chi non mangia carne (né pesce) dovrebbe mangiare solo verdura? Forse è per via della parola "vegetariano" che per assonanza ricorda "vegetale"? Perché in tutta onestà,non mi vengono in mente altre spiegazioni!
