A question about Boxty Potato Cakes?
I've searched for a good potato pancake recipe for nearly 30 years with little success. Finally, last week I was introduced to Boxty Potato Cakes here a YA.
I made some today and I think they are great.
My question is about how to serve Boxty.
Are they served along with sausages or bacon as a breakfast food?
Are they served as a side dish with lunch or dinner as a substitute for bread or other forms of potato?.
Are they served alone as a single dish meal?
If anyone wants to post their favorite potato pancake recipe, or their variation on Boxty, I won't get mad.

Except for the egg, "You Made Me Say It"'s recipe sounds like the one I tried today. Reckon he likes fried stuff? :-{p>

Boxty Potato Cakes
1 cup of mashed potatoes
1 cup of grated raw potatoes
2 cups of self-rising flour
1 to 1 ½ cups of milk or buttermilk
¼ teaspoon of salt
¼ to ½ cup of butter
Sour cream, optional
Directions
Mix the mashed potatoes with the grated raw potatoes in a large bowl. Stir in the rest of the dry ingredients and 1 cup of liquid. As the batter is mixed, add small amounts of additional milk or buttermilk until the batter is loose enough to work with. Melt two tablespoons of butter over gentle heat. When the butter is melted and the pan heated, ladle small pancakes into the pan. Brown on both sides and serve hot with more butter or sour cream.
