No, it sounds disgusting, and I would never cook it either, what kind of chef would i be if I marinated the meat with coke...? I was just wondering what are your opinions

@ Chris. I totally agree with you, wine or porto, fresh herbs..i get it totally, i actually think this coke+ketchup marinade sounds a bit mediocre or at least i dont think any chef would make it.

try it! if it works then great, if not youve learned something. ive used coke in marinades several times in the past and have had much success. i cooked some beans in coke once and it came out great. depending on the size of the chops i wouldnt go much more than and overnight marinade. id add some onions to it to act as an aromatic. i worked at one place where we did a rum and coke marinade for our pork tenderloins and they tasted great. so yes you can use coke in a marinade.
I think that the coke would brake down the meat too much it you left them together too long. Like marinading it for overnight. I don't drink coke so my opinion may be skewed. It would add sugar to your mix but why not a salsa or something more than just tomato sauce? How about some soy sauce. Try it and tell us how it comes out.
Actually it works very well. There is no difference where you get your sweetness from whether it comes from brown sugar, sugar, corn syrup or coke. The acid in the ketchup will help offset the sweetness in the coke. You will of course need to add some savory spices also. Try it sometime, I think you will like your result. The coke will also tenderize the meat more than you can imagine.
To be honest with you, I am not into those types of marinades, I am more into the fresh herb and wine marinades. You being a chef, you would have a fair grasp of the marinating they do in the North of Italy with wild bore. Since my trip a number of years back, then down to the south of Italy, my whole ideas of food prep have done a complete about turn.
It's not unheard of to use either soda or ketchup in sauces or marinades - but I've never heard of using both at the same time.
I like Orange Juice as a marinade ingredient for poultry... and apple juice for sausage...
With highly acidic beverages for marinades, you just pour it right into your cooking pan... you don't "marinade" it over night or anything... at least that's how I've seen it done.
