Would an authentic recipe for fettucini alfredo include onions?
I'm talking "real" fettucini alfredo, not some knock-off where you add cream sauce to fettucini noodles. I went out to dinner last night at an Italian restaurant. I ordered fettucini alfredo, and it had a STRONG onion flavor to it. It caught me off guard.

Traditionally it does call for the use of Shallots. Shallots are a very mild onion used in cooking. Sounds like they were skimping on cost and using a plain ordinary onion as a substitute. Hence the strong onion taste! BON APPITITE!

More than likely the made something else in the pan and didn't clen it out too well. Alfredo does not have onion in it. Heavy cream, triple cream butter, parm, a little salt. Thats it.

I don't believe "authentic" fettucini alfredo recipes have onion...it's mostly just cream, butter, and parmesan cheese...
