    Get a big pot with a lid. Put some water in it also maybe some beer add a little broth, garlic cloves, When it comes to a boil add your lobster and cover. It dosen't take long. You'll know because it is bright red. Yum. Serve with some melted butter and lemon juice.

    Broiled! (If you are looking for a fantastic lobster dinner, however this would only be the tails.)

    This recipe calls for two individual thawed or defrosted lobster tails:

    Split the tails, NOT from the underside, but through the top mound of the shell, starting at the tail and carefully forward - important that you use a heavy duty chef knife! Carefully twist the two halves upward from below, down the center, until the two "lobes" are meat side up. Fan out the tail end and protect it by wrapping it in foil. Preheat your broiler and line the broiler pan or heat proof dish with foil.

    Melt 1 stick (8oz) of butter until bubbling hot; finely mince one toe of garlic and one small shallot and place into a small heat-proof dish. Using a spoon or ladle, pour approx 1/3 of the melted butter into the garlic and shallots and stir the mixture until the aromatics start to wilt and the butter begins to cool.

    Spoon this cooled butter/garlic/shallot mixture over the meat in the tails. Sprinkle with fresh cracked pepper, kosher salt and the juice of 1/2 of a lemon.

    Place under the broiler, meat side up, approx 4-5 inches away from the flame. Broil until the meat is just cooked, approx 10-15 minutes, depending on how large the tails are.

    Remove from heat and wait 5 minutes before the next step.

    Carefully, using a small fork, loosen each lobe from their shell - the meat will pop out and sit beautifully over the underlaying shell. Remove foil from tail and present plate to an appreciative dining companion! Serve with remaining melted butter as a dip.

    Bring a big pot of salted water to a rolling boil. the water should be as salty as sea water. Pot the live lobster into the water for eight minutes. then take it out of the water and split it in two. Smear both sides with butter and stick it under the grill fro a few moments and eat with some lemon mayonnaise. Drink a crisp sauvignon blanc, and then you will be as close to the gates of heaven as is possible. a common mistake with lobster is to overcook it, and also to add too many other flavours
