What's your favorite one dish meal?

I made a one dish taco bake with mac'n cheese, ground beef, taco seasoning, salsa, and sour cream. I think I might try it with beans and maybe corn next time. It can be served on a bed of lettuce or with a salad on the side. Anyway... my family loves these types of meals. So, what are your favorite one dish meals? Recipes would be appreciated.

    My mom made a great taco salad. She used a huge meat platter as her serving plate. First she covered the platter with cheese Doritoes,then added shredded lettuce,tomatoes,onions,and cheese.To this she added red kidney beans and cooked hamburger that had taco seasoning. Over all of this she poured Catalina salad dressing. Give this a try,my family loves it,and it is so easy.

    Shipwreck Casserole

    An old-fashioned "hamburger hot dish" from an old newspaper clipping.

    1 cup chopped onion

    2 medium potatoes, sliced

    1 pound lean ground beef

    1/2 cup uncooked long grain rice

    1 cup diced carrots

    1 cup chopped celery

    salt and pepper

    paprika

    1 can tomato soup

    1 cup boiling water

    Butter a 2-quart casserole. Layer with onions, potatoes, ground beef, rice, carrots, and celery, sprinkling each layer with salt, pepper, and paprika. Combine soup with boiling water; pour over all. Bake at 300° for 3 hours.

    Shipwreck casserole serves 4.

    i make this for my family & everyone loves it including the picky eaters, as there is a little something for them all to pick at lol

    some recipes say you can add the hamburger to it raw, but i prefer to cook mine, just because its not so greasy then, even when using extra lean ground beef i found it was too greasy for me.

    i also like to add mushrooms, garlic & onions & or green peppers, when scamble frying the hamburger.

    sometimes i add frozen corn or canned .. easy dish to make changes too & hard to mess up....*note* while cooking if it does seem too dry don't be afraid to add a little water, sometimes this can happen, but don't add too much or the rice will become mushy & the potatoes will crumble

    Chow Mein Chicken Casserole

    1 T butter or margarine

    1 small red bell pepper -- chopped

    2 garlic cloves -- minced

    2 8-oz packages sliced fresh mushrooms

    1/3 cup slivered almonds

    3 green onions -- chopped

    1 can cream of mushroom soup -- undiluted

    3/4 cup mayonnaise

    2 t soy sauce

    3 cups chopped cooked chicken

    1/4 t pepper

    1 3-oz can chow mein noodles

    Preheat oven to 350.

    Melt butter in a large skillet. Add red bell pepper, garlic, and mushrooms; sauté until tender.

    Stir in almonds and next 6 ingredients; pour in a lightly greased 11- x 7" baking dish. Sprinkle with chow mein noodles.

    Bake for 30 minutes or until bubbly.

    this recipe is a great way to use up leftover chicken or even turkey.

    tuna casserole, enchiladas, shepards pie, are also good casseroles that my family enjoy. i hope this helps...tc

    Enchilada casserole! Take everything you would use to make enchiladas--corn tortillas, shredded chicken or beef, black beans, corn, green chiles, onions, cheese, and sauce--and layer it in a casserole dish in 3 layers to make a sort of 'lasagna'. Bake at 350F for 30 minutes, let sit for 10 and you're done!

    guilt free nachos

    mash up 1 avacado with salsa, a scoop of fat-free sour cream, and two scoops of plain yogurt. Serve with chips.

    Pasta Salad Trash:

    Whatever leftovers I have in my fridge (peas, broccoli, cheese, chicken, beef, peppers, etc) mixed with cold noodles and salad dressing

    Or for a hot meal: Cheggon Casserole

    Mix up three or four eggs with a cup of milk, a tablespoon of flour, pepper, salt, and maybe some chili powder. Add some shredded cheese (whatever your fave is) and some sausage or bacon or pieces of chicken or hamburger and some veggies (peppers, broccoli, asparagus, onion, etc). Like the Pasta Salad Trash this is a meal for getting rid of leftovers. Lightly grease a pie plate and press mashed potatoes into it like a pie crust (instant is fine) then carefully pour the cheggon mixture in. Throw a handful or tow of cheese on the top, cover with aluminum foil and bake until an inserted knife comes out clean (about 45 minutes). Serve warm. Or at room temp. Or cold.

    I forgot my masterpiece! Sausage and sauerkraut!

    Drain 1 package (approx 1 lb) of sauerkraut and put in a large pot. Pour in 1 can of applejuice concentrate, add a pinch or two of salt, and two cans of water. Heat until boiling. While the water is boiling cut 1 pkg of kielbasa into bite sized pieces. Add the pieces to boiling kraut and lower the heat to med-high. While this is cooking make up your favorite instant mashed potatoes. Once the mixture in the pot is hot, serve (with a slotted spoon) over the potatos. So very tasty

    Fried potatoes and onions with corned beef. Slice potatoes in thin bite size slices, meanwhile fry sliced onions til done and set aside. Fry potatoes til done, mix in onions and a can of corned beef, shredded. Cover and serve when beef is hot. Almost forgot. Season potatoes with salt and pepper.

    Linguini alfredo, served with grilled chicken or shrimp, salad, and a crusty bread. OR BBQ Chicken with a sweet potato (with a little brown sugar and butter), and a salad. OR Raspberry Fontina Chicken with couscous/baked potatoe with steamed brocoli.

    I love stews, any type of meat you like, fry some onions and peppers, brown the meat, add any veggies you like (I use root veggies like carrots) add potatoes, add stock, cover and bake in the oven for a good couple of hours, add seasoning and serve.

    Satay Chicken...just saute chicken breast add one of these instant satay sauces and cook out....buy a packet of fried rice from your favorite Chinese restaurant or make it yourself and serve the satay chicken also in a cup of lettuce.
