Your BBQ will need a temperature guage so you can keep the temperature at 145 to 160 degrees. Turn on one burner and keep the lid propped open a bit to keep the temp. low. Place the jerky meat over indirect heat.so have the burneron .... on the opposite side of where you put the meat.

Cut roast into 1/4" thick slices......marinade for 1/2 hour in..

    1 C soy sauce

1/3 C brown sugar (or to taste)

    1 tsp garlic powder

    1 Tbsp mesquite liquid smoke

    1/4 tsp cayenne pepper

Squeeze excess marinade out of meat. Lay on racks.

It will take several hours. Check every hour to see if the meat is leathery but not too dry. If you have the temperature too high you will cook the meat and not dry it.

cooks.com or food.com should have some recipes - basically you marinate it, thinly slice it (some recipes have you slice it first, then marinate it) then lay the strips on the rack and cook it VERY low and slow (about 140 for 8 hours) - not sure if your gas grill can be that low, maybe have to use it indirect heat). Saw one way on the food network tho (Alton Brown) where he took the sliced meat, laid it on old fashioned cardboard furnace filters, duct taped them to an ordinary box fan and dried the jerky that way.

One thing is for sure, once you make your own you won't want to go back to store bought

You need to cook beef jerky in a food dehydrator so it is at low heat for a long period of time.

    A BBQ cooks too fast.
