Making my hubby coconut shrimp for dinner, what is a good side dish?

My husband and I LOVE coconut shrimp and I am planning on making it for him for a special dinner. I just don't know what goes well with it. Any ideas on sides for coconut shrimp?? Nothing too fancy, just something tasty! Thanks!!

    You have asked for "ideas on sides" in your question, while a lot of the Answerers have listed 'pilafs' ['pulao's, actually !] and rice items in their replies !

    These rice/cereal based items are the main meal - and your coconut shrimp will itself be a 'side' dish, to accompany these. To claim that such items are 'side's is utterly ridiculous !

    Would any of these Answerers dare claim that bread loaves are 'side's to a roasted or curried seafood ?! That is exactly what they are doing about 'pulao's and rice-based dishes, which form the staple part of any meal !

    'Raita' is the only sensible suggestion among all the Answers you have received. You can find quite a few recipes, at :

    Steamed broccoli with a lemon wedge would be fine, but I understand what you mean by boring. So, here are some other options: - mixed spring salad with fresh tomatoes and a balsamic vinegar dressing - sauteed asparagus tips with diced tomatoes and garlic - oven roasted squash and red onion with olive oil, salt/pepper, garlic and rosemary I hope this helps.     Coconut rice.

    Replace 1/2 the water in the rice w/coconut milk. When the rice is done, mix in a bit of sweetened coconut milk (the Coco Lopez stuff near the bar mixers in the grocery store).

    Garnish w/scallions.

    both are roughly the same except when it comes to protein. ALMOST ALL veggies include a respectable amount of protein; fruits does not.

    I would make it a tropical/Caribbean themed meal.

    You can make pineapple rice. Just add diced pineapple pieces, sauteed onions and red bell pepper to cooked rice. Maybe use some cilantro for seasoning.

    Cook some canned black beans with salsa and a little cumin.

    Add a cocktail like mojitos, margaritas or rum runners.

    CONFETTI RICE

    1 cup rice

    1-1/3 cups water or broth

    1 tsp. salt

    1 tsp. garlic powder

    1 cup carrots, very thin 2 inch long strips

    1/2 cup chopped red onion

    1 cup cut zucchini, 1/4 inch squares

    1/2 cup frozen corn kernels

    1/2 cup diced red bell pepper

    1/2 cup frozen peas

    2 Tbsp. chopped parsley

    1 Tbsp thyme or marjoram

    Place rice, water, salt and garlic powder in a pot with a tight fitting lid. Bring to a boil, then lower heat to simmer. After 10 minutes, add carrots and onion. Steam another 5 minutes, then add remaining vegetables. Remove from heat, leaving lid on another 5 minutes. Fluff rice and distribute vegetables throughout rice. Sprinkle with herbs and serve.

    Herbed Basmati Rice

    1 cup uncooked long-grain (white) basmati rice

    1 3/4 cups water

    3/4 teaspoon kosher salt

    1 tablespoon unsalted butter

    2 tablespoons minced fresh curly parsley leaves

    1 tablespoon minced fresh dill leaves

    1 tablespoon minced fresh scallions, white and green parts

    Pinch freshly ground black pepper

    Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

    Sensation Salad

    1/2 to 3/4 lb. of finely ground Peccorino Romano cheese

    1 pt. olive oil

    Juice of 3 lemons

    4 tsp. balsamic vinegar

    6 cloves of garlic pressed with pulp and all juice

    Very cold iceberg lettuce, romaine and mixed baby greens

    Blend all ingredients together by hand. Toss greens together to mix well. Add dressing and toss gently to coat each leaf of greens. Salt and pepper (fresh ground) to taste. Serve on cold plates. This dressing will keep in refrigerator for an extremely long time.

    In India, we would make a simple 'raita' (salad), with cucumber, tomatoes, grated carrots plus beetroots, and finely chopped green chillies - all soaked in curd [non-sweetened yoghurt], with salt/pepper if needed.

    ...This salad proves an ideal side dish, that goes beautifully with any sea food, or even meat dish.
