I make a sort of home made rice-a-roni with vermicelli. Break them up, saute in butter, mix with rice and broth and seasonings. Sounds gross but it is really good.

In the Mexican culture there is a dish called "Fideo". This dish can be prepared many different ways...this is how I make it:
First I heat a little vegetable or olive oil in a pan and start to brown the Vermacelli noodles.
Then, when they are browned I put them in a separate bowl. In that same pan I brown some hamburger meat also adding chopped onion, garlic, salt, pepper, ground cumin, onion powder and garlic powder.
When the meat is cooked and browned nicely then I add my browned Vermacelli noodles and a can of pinto beans, a whole can of tomato sauce and a little water or beef broth if I've got it on hand.
Let this mixture simmer about 20-30 minutes, or until the Vermicelli is cooked and you've got yourself a great meal all in one pan!

I make a sort of paella with them.
Break up half a box of pasta into one inch pieces and saute in a pan in some olive oil until it's golden brown, then add 1 cup of hot chicken stock and simmer. If the pasta is still too al dente, add another 1/4 to 1/2 cup of stock and continue simmering until it's absorbed.
During the last 4 minutes or so of cooking I add shelled raw shrimp, and some frozen peas. Serve when the peas are heated through and the shrimp has turned pink and opaque.
Top with Garlic aioli.

I like the quick Chinese Style way. Here:
INGREDIENTS
1 (8 ounce) package dried rice noodles
2 tablespoons vegetable oil
1 clove garlic, minced
1 tablespoon soy sauce
1/2 tablespoon chili sauce
salt and pepper to taste
1 green onion, chopped
DIRECTIONS
Bring a large pot of water to a boil. Add rice noodles, and cook for 4 to 5 minutes or until al dente; drain.
Heat oil in a large skillet over medium heat. Saute garlic until tender. Stir in noodles, and season with soy sauce, chili sauce, salt and pepper. Sprinkle top with chopped green onion.

As part of vegetarian pad thai! Mmmm... check out www.allrecipes.com for good recipes, but avoid the ones that use ketchup or peanut butter - those are fake and Americanized.
The simplest recipes are the best; garlic, lemon/lime juice, & soya sauce are the key flavours.
