Wheat pasta, corn or make some sweet potato fries in the oven.

Fry some halved bananas in butter and CUMIN powder. 2 or 3 mins toss a couple of times and plonk on top of your chilli. SUPERB.

Absolutely cornbread! I would drains some corn and maybe diced chiles or jalepenos and mix into the batter, to add veggies. Here is a recipe:
GOLDEN CORN BREAD
1 cup Aunt Jemima Enriched Yellow Corn Meal
1 cup all purpose flour
2-4 tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup vegetable oil
Preheat oven to 425°F.
In a large bowl, combine corn meal, flour, sugar, baking powder and salt.
Add milk, egg and oil. Beat until fairly smooth, about 1 minute.
Bake in a buttered or sprayed 8 inch square baking pan 20 to 25 minutes or until a wooden toothpick inserted in center comes out clean.
Variations:
Muffins or Corn Sticks: Pour corn bread batter into a buttered or a paper-lined muffin tins or hot well buttered corn pone pans.
Mexican Corn Bread: Stir 1 cup whole kernel corn, 2 tablespoons chopped green chiles and 1/2 teaspoon chili powder into batter. Bake in a buttered or sprayed 8 inch square pan in a preheated 425F oven 22-25 minutes or until wooden toothpick inserted in center comes out clean. Remove from oven, top with 1/2 cup shredded cheddar or Monterey Jack cheese.
PS - In Texas, it's cornbread or crackers, or salty tortilla chips!

Polenta (or yellow cornmeal) is the tastiest, healthiest starch and it goes beautifully with chilli. You can make it in a stiff mash-like texture or you can grill it in squares so the edges get nice and crunchy. Add parmesan to enrich the taste or leave it out if you prefer.

Corn bread goes best but since you want healthy you might do corn on the cob but there is nothing better with chili they corn bread to sop up all those yummy juices in the bottom of the bowl

Well it is nice with a jacket spud covered with grated cheese, but you could also try it in a wrap with a bit of cheese on it. You can get the tortilla wraps from the supermarket

how about putting tortilla chips on a big plate, top with your chilli, add some grated cheese with some sour cream on the side! don't 4get a nice cold beer to go with it

rice and tortillas is very good
or just serve with some salad and yoghurt thats good too they like tacos (in the uk) but with out the fattening shell
also if you cook the meat first then the onions you wont have to use any oil

chuck it into a chilli con carne' you fool!!
add the following.
500g mince
Onions
Jalapeno's sliced
Peppers
Mushrooms
Carrots
Rice
Mix it all together in a huge *** pan, add some garlic *crushed* add some tomato puree and leave to simmer for a little simmer every now and again.
