Tortillas are pretty amazing. There are the typical Mexican options sush as tacos (groundbeef/steak/chicken) with cheese, bell peppers, onions, gaucomole, tomato, etc. I love chicken quesadillas, grilled on the stove and I sprinkle a little taco seasoning and dip it in salsa and sour cream. I also like enchiladas.

There are other things like crisping them in the oven with a little sugar and cinnamon and butter and then eating them with a sweet fruit dip. I have made a really good one with apple, cinnamon, brown sugar and apricot jelly. You could also just wrap up apples in them too.

You can use them in place of bread for sandwiches, like tuna or ham or turkey and add your mayo and tomato and lettuce.

I often make breakfast burritos, filling them with eggs, sausage, bacon, and hashbrowns.

You can also use them in casseroles. I made on the other night where the bottom layer was tortillas and on top with a mixture of cream of chicken soup, chopped boiled chicken, and taco seasoning. Then I sprinkled cheese and baked it at 350 for 25 minutes.

Pretty much whatever you are craving can probably go in a tortilla!

I don't eat red meat personally, but I guess you could eat them with a combination of: chicken, beef, ham, bacon, fried fish, mixed veggies (tomato, cucumber, lettuce, avocado), mixed fruit (strawberry, banana, grape, citrus fruits, melons), taco sauce, hot sauce, salsa, sour cream, and of course cheese.
