You need to talk to her about your concerns and ask her to help. Maybe she has other ways to help the planet that she prefers to do. She is your parent and if she doesn't choose to turn off her lights or anything else, it's her prerogative.

Her house-her rules. It doesn't matter in the slightest anyway though. On or off makes absolute no difference worldwide. The power companies are still putting out just the same 24/7.

Would you rather eat or whine and be bitchy about having your lights turned off like a hippie douche?

She can cook before or after. Or you make it. and maby you could throw the switch (the fuse box) shut the house off

She doesn't have the beliefs that you do.

Turn your lights off anyway and maybe she'll feel ashamed and turn hers out.
