What is your fav vinaigrette recipe?

Update:

I was watching Pepin last night and he was making the usual mustard vin. I thought it would be kewl to see how creative others are.

    This is from memory, so forgive the weird measurements.

    3 Tbsp. balsamic vinegar

    2 Tbsp. fresh lemon juice (and a little of the zest)

    1 big Tbsp. Dijon

    1 big spoonful of minced garlic

    A good squeeze of honey (maybe 3/4 tsp.?)

    1/3 - 1/2 cup olive oil

    A pinch of kosher salt and fresh ground pepper

    Shake it all up and store in the fridge. Let stand at room temp a bit before serving and shake well again.

    Cowboy Vinaigrette:

    1 1/2 cups apple cider vinegar

    3 tbsp sugar

    1/8 cup horseradish

    3 cups plus 2 tbsp veggie oil

    1/4 cup finely chopped red onion

    1/8 cup worcestershire sauce

    3/4 tbsp dijon mustard

    Place everything but the oil in a food processor, and combine. Slowly add the oil until emulsified. Keep in an air tight container.

    This is god as is or mix with ranch dressing for a creamy vinaigrette for salads or to dip fries in, or as a dressing for pasta salad.

    I know you aren;t asking for a ranch recipe but since I like to mix the 2 here is my ranch recipe:

    Ranch Dressing:

    3/4 tsp dried chives

    3/4 tsp dried parsley

    1/4 tsp dill weed

    1/2 tsp garlic powder

    1/2 tsp onion powder

    1/4 tsp salt

    1/2 tsp black pepper

    1 heaping cup mayo

    1/2 cup buttermilk

    Mix the dry ingredients into the mayo. Add the buttermilk and keep in a container in the fridge

    1 tablespoon Dijon mustard

    whisk in:

    1/4 cup red wine vinegar

    3/4 cup really great Olive oil

    Season to taste with salt & pepper, maybe some tarragon or thyme

    Goes great with a spring mix salad, or just Iceberg!
