potato question .............................?
will it be ok to go ahead and cut up my potatoes and put them in a pot of water till i'm ready to cook them? will they turn too starchy or something -- seems like i've heard that before.

They will be fine. You'll probably lose some nutrients however sometimes being organised has to take priority. In restaurants they prepare ahead of time.

I know I have let mine soak in water with some salt to slow down the browning, at least till I got them all cut up. That could take 10 min if I have a lot. The potatoes are fine even up to 15 min. I do know potatoes start breaking down in water. I know the starch is released when your cooking them, I think the starch starts being released into the water when the sit in the water. This is why your water clouds and thickens.
Potatoes are starchy already, some more them others.

you might want to put a saucer or small plate in on top of the potatoes to make sure they stay submerged. If little tips stick out of the water they can turn brown or black.

there is nothing wrong with cutting up your potatoes and keeping them until your ready if you plan on eating them not until way later keep the heat on a med-low...however do watch that they dont get mushy and start falling apart and i keep salt sprinkled in mine
