What's the best thing to use to make the yummiest french fries? Coconut oil? Lard? What?

I have been using olive oil but I read somewhere that it's not the best thing for french fries.

I'm not concerned about the 'health' aspect, just the flavor and texture.

Lard is the absolute best, peanut oil next. Make sure the grease is hot when you put in the potatoes. Let them set in cold water as you're cutting them up...then drain and fry!

Duck fat. Seriously. Hard to find; but what a flavor.

If you mean commercially available, easy to find and inexpensive, then you're talking about peanut oil.

old style MacDonalds were done in beef fat - goose fat is to die for, but hard to come by. I think lard makes the best fries and is easily available.
