Orzo with parmesan and basil
1 1/2 cups orzo, uncooked 1/4 cup, plus 2 tablespoons
3-tablespoons butter melted julienne-sliced fresh basil
3-cups chicken broth Salt and freshly ground pepper
1/2-cups grated Parmesan cheese to taste—Garnish fresh basil sprigs
Saute’ orzo in butter in a large skillet over medium-high heat, stirring constantly,
until golden. Add broth; bring to a boil. Cover, reduce heat, and simmer 20 min.
or until orzo is tender (liquid will be absorbed). Stir in Parmesan cheese,
Julienne-sliced basil, and salt and pepper to taste. Garnish, if desired. Serve
Immediately. Yield: 4 cups.
Or Sicilian broccoli
2 1/2 cups fresh broccoli (florets) 2 tablespoons olive oil
2 cloves garlic, minced 1/4 cup sliced ripe olives
2 tablespoons butter or 1/3 cup grated Parmesan cheese
margarine, melted Garnish: lemon wedges
Arrange broccoli in a vegetable steamer over boiling water. Cover and steam 8 to
10 minutes or until crisp-tender. Arrange broccoli on a serving platter; set aside,
and keep warm.
Sauté garlic in butter and oil in a small saucepan over medium heat, stirring constantly,
2 to 3 minutes or until golden. Stir in olives. Pour mixture over reserved broccoli
sprinkle with cheese. Garnish, if desired. Serve immediately. Yield: 4 servings.

I make chicken parmesan for my husband, and I serve it with a side of angel hair pasta with mushrooms and artichokes covered with the same marinara sauce I use on the chicken and topped with shredded Italian cheese blend. I also serve it with some garlic cheese toast made by putting butter, garlic powder, parsley flakes, and the Italian cheese blend on sliced Italian bread and then baking in a 350 degree oven for 10 minutes. The whole combination is delectable. If you want a veggie side, try some leaf lettuce with halved cherry tomatoes, mozzarella cheese balls, and basil leaves and drizzle with either Italian or Balsamic Vinaigrette dressing. Enjoy your meal!

Parsley potatoes. Use red potatoes and cut into bite size chunks. Then spread on a baking pan. Drizzle with olive oil, salt, pepper, and parsley. Bake in the oven at 350 for about 10-15 minutes. Delicious!

Penne in a simple but spicey marinara sauce (or butter, garlic and parmesan) and some swiss chard sauteed in olive oil, red wine vinegar and freshly ground black pepper.
