What's a nice Thanksgiving dinner for two, who are far from family but want to cook and eat at home?
I love to cook, and am good at it, but really can't see roasting even a small turkey on Thanksgiving if it will just be the two of us. I've seen that you can buy just the breast, but that seems a bit blah, and even then, it would be about four more pounds of turkey than we are likely to eat, even with leftovers. (Really great ideas for cooking just a turkey breast will be considered, however!!) We eat a roast chicken about every ten days to two weeks, so that's out, too. Thank you, thank you, thank you!!!

How about two Cornish game hens? They're kind of special and won't overwhelm you with leftovers.

When we (the 2 of us) were traveling in our 5th-Wheel Trailer for 18 months, we celebrated Thanksgiving with a chicken stuffed with dressing and all the sides of a normal Thanksgiving meal. Our propane oven was too small to hold a turkey so we did the chicken thing. We also ate a lot of chicken but stuffed with the dressing and all the sides really made it special.
I know they have out there in the freezer section that turkey loaf that is part white meat/part dark. I had it years and years ago so don't know if they still even make it. It was about the size of a normal meatloaf. I think it even had gravy on it.
I've been looking at the recipes that call for deboning the chicken and stuffing it - that would make your chicken something special.
In our family, the turkey sandwich the next day was in some cases the "extra treat" of the bird. Nothing could beat that turkey sandwich.

You could grill turkey tenderloins that have been marinated. Then you can add either sweet or white potatoes and a veggie. Fix a small casserole of dressing if you like. Don't forget the cranberries! Make pumpkin muffins as your bread and freeze the extras. Then you could have apple pie or crisp or dumplings for dessert but not miss out on the pumpkin taste.
BTW I made a small turkey breast a couple years ago when it was only going to be 2 of us. We thoroughly enjoyed it and froze some of the extra. And that way I had the carcass to make the broth for soup.

we are able to be cooking a huge turkey this 3 hundred and sixty 5 days. we are homestead interior the U. S. this wintry climate with our son so having a huge dinner with him would be remarkable. final holiday we've been foreign places and that they don't have Thanksgiving in Hungary and it relatively is tough to locate an entire turkey besides. they don't look to love roasted turkey there, you will desire to purchase an entire goose or duck for much less then turkey. i replaced into finding on the frozen ducks here in between the food shops and it replaced into over $seventy six.!! In Hungary it may be much less then $20. for an entire goose. wish each physique has an incredible holiday

how about a turkey tenderloin? that way you can still have turkey, but won't have such a huge amount of meat left over. (unfortunately i've never cooked one, so i'm sorry i don't have any recipes for you, but i'm sure it's not much different than any other kind of tenderloin.) you can still do potatoes, dressing, and another veg to do on the side, because it's easy to make small amounts of those. pick your dessert and there you go!

Maybe you can cook those butterflied turkey breats with farce. You know when you place home-made farce on the flattened butterflied turkey breats, roll them into a roast. I forgot what's it's called but it looks really good and it's delicious. I'll try to find the recipe for you.
This one has herbs in it, it's a good suggestion!
