Can you use yogurt to make cookies?

I'm just wondering.. I wanted to make lemon flavored cookies but we only have lemon yogurt. How do you think they would come out? Any experiences with this?

    YOGURT COOKIES

    1/2 c. butter, softened

    1 1/4 c. sugar

    1/2 c. plain nonfat yogurt or low-fat lemon-flavored yogurt

    2 egg whites

    1 tbsp. grated lemon peel

    1/2 tsp. vanilla

    2 c. uncooked oats

    1 1/2 c. flour

    1/2 tsp. baking soda

    1 tsp. baking powder

    1/4 c. powdered sugar

    Heat oven to 375 degrees. Lightly spray cookie sheet with no-stick cooking spray or oil lightly.

    Beat butter and 1 1/4 cups sugar until fluffy. Add yogurt, egg whites, lemon peel and vanilla. Mix until well blended. Gradually add combined remaining ingredients except powdered sugar, mix well. Cover and refrigerate for 1 to 3 hours.

    With lightly floured hands, shape dough into 1 inch balls, place on prepared cookie sheet. Using bottom of glass coated with sugar, press into inch thick circles. Bake 10 to 12 minutes or until edges are lightly browned. Cool 2 minutes on cookie sheet, remove to wire rack. Sift powdered sugar over warm cookies. Cool completely. Store tightly covered. Makes about 4 dozen.

    use the yogurt in place of the eggs, add some lemon extract and lemon zest.

    1/4 cup yogurt to each egg

    I had a recipe for cookies that called for vanilla yogurt several years ago and they were delish! Cannot locate that one right now, but do remember it didn't have eggs in it. Was very reminiscent of sugar cookie recipes.

  • If you find a cookie recipe that uses sour cream, you can use the yogurt in it. My mom used to have a recipe that she made often when we were kids that she'd usually use yogurt in, since she made her own yogurt.

    She fed us a LOT of yogurt when we were little. My dad was not amused as he thinks that yogurt is the most disgusting thing in the world. (she's finally got him eating frozen yogurt, but it's taken over 30 years)

    Probably wouldn't taste that great but would be possible,How about try a box of lemon cookie mix and just add water or whatever it needs,that might taste better.
