This is a favorite of mine.

    Corn Noodle Casserole

1 (12 ounce) package uncooked egg noodles

    1 pound ground turkey

1 (15 ounce) can canned or frozen corn

2 (11 ounce) can cream of mushroom soup

    salt and pepper to taste

    1. Preheat oven to 350 degrees F. Lightly grease a medium casserole dish.

    2. Bring a large pot of lightly salted water to a boil. Add noodles, cook for 6 to 8 minutes, until al dente, and drain.

    3. Place turkey in a skillet over medium heat, and cook until evenly brown. Drain grease.

    4. In a bowl, gently mix cooked noodles and turkey, corn, and soup. Season with salt and pepper. Transfer to the prepared baking dish.

    5. Bake 30 minutes in the preheated oven, until bubbly.

If you don't have ground turkey, use chopped cooked chicken. I do not recommend substituting ground beef; the flavor won't work as well.

Buy a can of chipotle peppers. Make a pot of rice with chicken broth and two chopped up peppers in there. Add a can of lentils or red beans, stir-fried onions and peppers, some cheese, and you have a hot mexican dish waiting for guacamole. You can even wrap it up in a burrito

Tammy, I try and do something different each night, whether lasagna, fish, minestrone (vegetable), roasts or stir fry. I also scan food network.com. I look at contributors own recipes. Like SandyPaw's meatloaf which is awesome. Looking at recipes on here also broadens your library and technique.
