This is not exactly new, but makes a great treat especially for summertime fun. Cupcakes baked in icecream cones. They're simple and can be decorated to look like an icecream cone w/sprinkles.

you could bake cupcakes in mini muffin pans and place a stick in each one to hold it. Then frost it. It will be bite-sized and be gone in one bite.
Or you could make cheesecake tarts that are the size of a cupcake but that would be more than one bite and a little messy. It would have the paper or aluminum cupcake wrap on it so it wouldn't be too bad.
Here are some other ideas:
- Large cookies
- Mexican Wedding cookies - little round balls covered in powdered sugar with nuts in them
- Little cream puffs - places like Fred Meyer and Costco sell wonderful ones in their frozen section or you can make your own.
- Homemade donut holes
- Dates split and filled with cream cheese
Hope that helps.

Fresh fruit skewers. Mix cubed fresh pineapple, grapes, strawberry pieces, watermelon, cantaloupe, on wooden skewers. They are easy to pick up and eat.
*Use whatever fruit you like. Just make it colorful.
