pumpkin pie i want to do a nice sweet one like american ones,and i want to know pumkin as a veggi how to cook?

when i was in the states i could buy tin pumpkin,i found it impossible to get a pumpkin after Halloween here in uk..if can not get pumpkin whats a good alternative for nice pie

    If you cannot find a pumpkin, you can use sweet potatoes or a yellow squash.

    Sweet Potato Pie

    Ingredients:

    1/4 cup butter, softened

    2 eggs, separated

    1 cup sugar

    3/4 cup evaporated milk

    1 1/2 cups cooked mashed sweet potatoes

    1 teaspoon vanilla extract

    1/2 teaspoon nutmeg

    1/2 teaspoon cinnamon

    1/4 teaspoon ginger

    1 unbaked 9-inch pie crust

    Directions:

    1. Preheat oven to 350 degrees F.

    2. Cream butter and sugar with an electric mixer. Beat until blended then add egg yolks and beat.

    3. Stir in sweet potatoes, vanilla, milk, nutmeg, cinnamon, and ginger.

    4. In a separate bowl, beat the egg whites. When foamy, slowly add 1/4 cup sugar and beat until stiff. Fold into the sweet potato mixture.

    5. Place in pie crust, bake about 40 minutes until firm. Serve with whipped cream.

    I use tinned pumpkin, I have never cooked down a pumpkin. . It comes in two kinds, spiced already, and not. Another alternative is yam, or sweet potato pie. It has a similar consistency and color and the same spices.

    For pumpkin pie, I use the recipe on the Libby's pumpkin can. It works swell. But I make one change, I change 1/2 cup of the white sugar to brown sugar. Let me see if I can find the recipe. Yep, here it is:

    Libby's Famous Pumpkin pie:

    Ingredients

    3/4 cup granulated sugar

    1 teaspoon ground cinnamon

    1/2 teaspoon salt

    1/2 teaspoon ground ginger

    1/4 teaspoon ground cloves

    2 large eggs

    1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin

    1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk

    1 unbaked 9-inch (4-cup volume) deep-dish pie shell

    Whipped cream (optional)

    .Directions

    MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

    POUR into pie shell.

    BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving
