Some ideas.
Smoked mussels or baby octopus (canned)
Scuppernongs or Muscadines (check whole foods)
Gushers candies
Grape nuts
Figs (in season now)
Delice de Bourgogne (would go nice with the figs!)
Moroccan Preserved lemon
These are just some ideas for interesting ingredients either texturally, or for flavor, or both. As for theme, there generally isn't a discernible one on the show. Only by course. I think theming it helps the contestant too much, and without cooking, you've already made it somewhat easier.

It pretty much makes no sense to have a no cook themed chopped basket.
