I live alone and need to freeze items I am not going to use very fast. I freeze cream cheese as well as all other types of cheese and thaw when needed. I usually remove it from the freezer, cut off what I need and store the rest back in the freezer. Just be sure to thaw it in the refrigerator. I also store all breads and butter in the freezer. The trick to getting soft bread from the freezer is thaw what your going to use in a sealed baggie. I love my freezer!

Yup. It has to thaw to room temp before you beat it into a cheesecake though.
