Mini muffin recipe with white cake mix?
I saw a recipe online for lemon mini muffins made with box white cake mix a few days ago, and now I can't seem to find it back. Can anyone find something similar? I'm tired of googling, thanks all!

Lemon Poppy Seed Muffins
1 white or yellow cake mix or lemon cake mix
Small instant lemon pudding
4 eggs
1/4 c. oil
1/2 pt. or 1 c. sour cream
1/4 c. water
Soften 1/4 cup poppy seeds in 1 tablespoon water; set aside. Mix all above ingredients. Add 1/2 teaspoon lemon extract or grated lemon peel. Fill muffin cups 1/2 full; makes 3 dozen or fill loaf pans for bread. Bake 15-18 minutes at 350 degrees, watching carefully.

Try Lemon Blossoms. The recipe uses a yellow cake mix, but I bet white would work.

INGREDIENTS 1 cup self-raising flour 1 cup sugar 2 eggs Β½ cup milk Β½ teaspoon vanilla 2 tablespoons cocoa 3 tablespoons butter METHOD Preheat oven to 180Β°C. Sift all dry ingredients into a mixing bowl. Add milk, eggs and vanilla. Mix ingredients roughly. Melt butter and add to bowl. Mix thoroughly, until all combined. Pour into 25cm round cake tin. Cook for approximately 25 minutes. .. if you would like more chocolate just melt some chocolate into it, or if you want icing melt chocolate and icing sugar in a small bowl in the microwave or over the stove and spread it all over the cake once the cake is cool after cooking yes you can just put some baking powder into your Flour if you have no self-raising flour:)
