You thought wrong. Did you see him eat Ciel's soul?
No.
And that's what season 2 is about. What happened after Sebastian took the soul out to where the show currently started. The mystery unravels as you watch the season.

no ciel`s soul was not eaten by sabastian... in episode 23 or 24 sabastian had that fight with ash (the angel character) would had torn sabastian arm off voiding the contact to take ciel`s soul
