Mint Infused Olive Oil Recipes?

I bought a gorgeous set of olive oils (meyer lemon, garlic, and basil infused oils) and the salesperson gave me a bottle of mint infused oil (it was their last one and he didn't want to cart it back to the shop). Any ideas on what to make with it? I've searched online but I've found how to MAKE the oil, not what to do make WITH it. I've drizzled it on watermelon, but it'll take a lot of watermelon to go through this bottle!

    Here's a few ideas:

    "Roasted Vegetables"-Place vegetable slices like: zucchini, red/white onions, yellow crooked neck squash onto a baking sheet and drizzle them with the mint infused olive oil, dust them with sea salt, pepper and ground cumin. Roast at 400 degrees x15-20 min.

    (Your preference)"Lamb or Pork Chops"-Create a marinade of the mint infused olive oil, lemon zest, sea salt, pepper, ground cumin, minced garlic, chopped coriander (cilantro) & paprika. Grill or broil the meats until cooked to your preference.

    Marinated Feta Cheese"- Take some feta cheese cubes and place them in a clean jar. Add in peelings of lemon, a sprig of rosemary, a few peppercorns, no salt since the feta has alot of salt then top off the cheese cubes with the mint infused olive oil. Put a lid on the jar and store in the fridge for about a week or two. Add to salads or orzo pasta salad.

    A mint-chives vinaigrette dressing is tasty with strong cheese on a starch. For example as a potato salad or on top of baked beets.

    Sprinkle the cheese onto the starch. Strong cheeses include blue cheese and goat cheese. Mix 2 parts vinegar to 1 part oil and pour on top of that. Chives, salt, pepper to taste on top of the dressing.
