How long does it take for your body to go into starvation or fat storing mode?

What I mean is, I know if you don't eat for like days at a time then your body stores any food it gets because it doesn't know when the next meal is coming. Or something like that. But on average, for someone like me, 5'5", about 120 lbs, female. How long on average does it take for this "mode" to happen?

Update:

Reason I ask is, yes I do want to lose weight, and while I eat fairly healthy, I think I eat too often in the day. I don't know if I'm supposed to let myself feel hungry for a bit before my next meal, or eat when I'm hungry. Is feeling hungry for an hour before my afternoon snack okay? As it's about 6 ish hours between lunch and dinner for me. I don't know if it's okay weight loss wise, to eat when I'm hungry, or let myself feel hungry for an hour here or there.

Let me put it like this. If you go outside right now and go run 5 miles (will take you under an hour), your heartrate and metabolism will elevate and your metabolism will STAY elevated for several more hours even after you have stopped running. Dieting by eating less calories is not the way to go. Proper nutrition combined with cardio/weight exercise will give you the results you want much faster as long as youre willing to make the effort. If you try to lose weight by eating less, starvation mode will kick in at some point (it doesnt matter how long it takes, itll kick in and your metabolism will slow) and thats not what you want. You want to burn the weight off and keep it off. Also, weighing 120 isnt that bad for 5'5. Could be worse. You could be having to lose 50lbs instead of 5-10.

Basically, as soon as your body is looking around for a source of energy and can't find it.

It is actually really healthy to eat several tiny snack-size meals throughout the day then to eat a couple really big meals. The key for you is to make sure you aren't eating too many carbs and you are staying within the right calorie count, You don't need to lose weight. You will get healthier if you cut out sugars, junk, fried foods, and grain-based carbs (bread, pasta, cereal, rice, etc.). Focus on lean protein and fresh veggies.
