Cooking: Why do I add milk to an egg noodle recipe?

I make egg noodles: cup of flour; egg whites or an egg; dash of salt; and always a splash of milk. I wonder what the milk adds to a recipe. Milk is also part of pancakes, too, usually.

    Pancakes and noodles are totally different.

    Where did you get the recipe for the noodles?

    I am guessing the person that gave you the recipe or obviously the one that wrote the recipe used milk.

    Milk is not usually in egg noodles.

    You can replace the milk with water if you wish. I am guessing there is not much in the recipe as most of the moisture would come from the egg.

    It is very possible that the person that made them the first time found the dough a bit dry and rather than crack another egg and possibly use only a part of it replaced the egg with a splash of milk. (Probably had it on the counter and it was easier to grab than water)

    egg noodles do NOT call for milk..What they add is liquid and a bit of calcium..thats it.

  • I've never heard of egg noodles made with milk. I'm wondering if it just makes up for eggs that are too small? If you make the noodles without milk and it feels too dry - just add more egg.

    Answer: Flavor.

    Recipes are suggestions. You find a recipe, try, try variations.

    As Jay suggest -- try making with plain water than milk. You will find that milk improves the flavor.

    I suggest that you omit the milk and see what you get.
