Cooking for 2!?
I m used to cooking for a massive family home but me and my boyfriend have moved out so now I m just cooking for me and him.... I don t know what to cook because I used to make batch meals on a budget (chilli con carne/ lasagne) now if I try and make those I end up with a freezer full of left overs(tiny freezer I need for breast milk). HELP!

Cook the same stuff, but less of it. If your recipe makes 6 servings, make only 1/3 of it. The way not to end up with a freezer full of leftovers is to eat the leftovers before the freezer gets full.

Since you already know how to prep meals, trim them down and add a twist to them: small batch of chili that can be served in a tortilla shell, cooking a few lasagna noodles, and making “roll ups” with whatever you want to fill them with, small batch meatloaf, baked in a small loaf pan or in jumbo muffin tins, same with other casseroles, just cut back and consider other presentations.

Just use half a recipe. If you normally use 3 pounds of meat... just use 1.5 pounds. Etc.

Just cut your recipes in half for what you can. For things like lasagna, freeze the other half immediately and keep it for another night in the month.

You have to eat the freezer down every so often meaning you don't cook for a couple days in a row.
Also when you make a recipe - look at the servings and divide it until you have enough for 2 or 4 servings.
Eat freezer food for lunches - saves tons of money.

Option 1 -- get a bigger freezer.
Option 2 -- go back to school to learn simple math, This will allow you to divide recipes into smaller batches.

Kate, I think the simplest solution is to invest in a good cookbook. If you are successful at cooking, which it sounds like you are, a cookbook will help you with the quantities of ingredients and you can take it from there.
