Healthy stuffed potato recipe?

     Stuffed potatoes are good because of all the unhealthy stuff like butter, sour cream, cheese, and bacon. I recently tried to make a fairly healthy version and it was OK but no where near as good as the unhealthy stuff.

    Scoop out a large quantity of the baked potato, and fry with a little strong cheese, onion, egg, spring onion and vegetable - like a vegetable burrito recipe, then return it back into the potato. Add a little olive oil if your really need it.

    The cheese will add the oil needed to fry the rest, and you don't need much.

    I grill potato wedges coated in curry powder and flour mix, with a drizzle of olive oil. Tasty and lower fat than chips.

    Light sour cream and chives. Low fat light cheddar shredded cheese and whatever else wanna add to it thats low fat and light

    Just omit the cheese, processed meats, with a bunch of butter and salt, you got it.
