Is it still called adultery if all people involved
are fully informed and give consent to (i.e.,
are okay with) whatever's going on? I would
say, for the most part, yes it is disrespectful...
but not so much for the case I just described.

Well, sure, in most cases it is, but there are always exceptions. My own grandma is one of them. My grandpa got dementia in his 60s and my grandma gave up everything to care for him. She said she'd never put him in a home, but she didn't know the daily life of a dementia caretaker. By the time she put him in the home, he didn't even recognize her. A few months later, she met a man and they got married after grandpa died. It didn't hurt my grandpa at all, because she still came by every single day. And he still didn't recognize her.

The term adultery is more an American term but it is frowned upon because it shows someone to be unreliable, flaky and untrustworthy. It is disrespectful to the family and partner you are with
