It was never clearly explained, but it seems likely that Yhwach's soul influence may be the reason for it. Normally Quincy are just humans who age normally like anyone else. They aren't immortal even with their powers. But that Bazz-B and Haschwalth were alive 1000 years ago does imply the Sternritter are different.
