How do I go about declaring myself LEGALLY independent from my birth parents?

...I'm 18 if that helps anything, and I know that I am legally able to at this age.

At 18, you can act on your own by entering into contracts with others to establish a business. You can also marry and be emancipated from your parents.

Emancipated Minor - difficult legal process. Cannot reasonably do it without a lawyer and a good reason.

Since you are already 18 - the law already sees you as independent, you do not need their consent to do anything that you could otherwise legally do.
