Congratulations, newlyweds. Here is an easy dish I have prepared for family and friends. It reheats nicely the next day, too. ( Sometimes I use 6 chicken breasts)
Swiss Chicken
5 boneless, skinless chicken breasts
5 slices Swiss cheese
1 can chicken soup
1/3 C. milk
2 C of herb flavor stuffing mix
1.2 C. melted butter
Spray a 13 X 9 " baking dish with Pam. Place chicken in dish, sprinkle with garlic powder and pepper.
Top each breast with a slice of cheese
Combine the soup and milk, stirring until smooth. Pour over chicken. Sprinkle the stuffing mix over all ; then drizzle butter over stuffing mix. Bake at 350 for 45 minutes or until chicken is done. Serves 5-6
Easy Parmesan Garlic Chicken
1/2 C parmesan cheese
1 envelope Good Seasons Italian Ranch Dressing Mix
6 boneless, skinless chicken breasts
1/2 T garlic powder
Mix cheese, garlic powder, and dry salad dressing mix.
Moisten chicken with water and then coat evenly with the cheese mixture
Place in a shallow baking dish. Bake at 400 for 25 min or until chicken is cooked through. Seves 6. This is good warm or cold !!

GUMBO!! (I live in southwest Louisiana)
In a stock pot, fill the pot about 3/4 of the way and bring to a boil. Add in 1 Jar of Roux. Stir occasionally to keep roux from sticking and burning. When the roux has completely desolved (no chunks) lower to a med-high heat and add in thawed and seasoned meat (chicken & smoked sausage is a good combination or shrimp & lump crab meat) Let cook until chicken is tender or meat is thouroughly cooked. The gumbo should be a little less thick than a chowder would be. Serve over cooked rice. If you reheat the gumbo be sure to bring it to a boil again.

I have this super easy enchillada recipe.
get whole wheat (or the regular) tortillas
2 regular size cans of Hormel chilli (w/ or w/o beans)
2 cups of shredded cheese or your choice
a pinch of cumin
warm the chilli with a 1/4 cup of water on stove top and add a pinch of cumin
preheat oven to 375 degrees
add your chilli and cheese into your tortillas and roll them up. add the remaining cheese and chilli to the top of your tortillas. I usually put them in a 9 x 13 pan and it should make 6 enchilladas.
bake for 15 minutes.
both hearty and delicious!! Everyone I have made them for has loved them and thought they were from scratch.
